A Boston Butt is a lot of neck and shoulder of the pig. It has nothing to do with the back of the animal. This cut is famous in the U.S.A. because of its use in 'pulled pork', or slow cooked draadjesbig. The Boston Butt contains a piece of shoulder blade so the cooking process goes better and develops more flavors. A Boton Butt weighs about 2.5 kg.
Beef & Steak is the only butcher in Europe to cut standard offering.
